Bendigo restaurant Rocks on Rosalind will farewell co-director Finn Vedelsby this week.
Previously in partnership with chef Ben Massey, Mr Vedelsby leaves the business to follow international wine tourism opportunities and to develop specialised training courses for the hospitality industry.
“I am very proud to pass the hospitality torch to Jay,” Mr Vedelsby said.
“He exhibits experience beyond his years, and I am excited that someone of his age will have this opportunity to own their own business.
“After spending five years in our stunning building, looking after Bendigo locals and visitors, I have mixed emotions leaving my faithful team, clients, and business partner Ben Massey who has been my friend of nearly 20 years”.
Mr Massey will be joined by two new business partners, chef Jay Harkness who has been employed at Rocks on Rosalind and in kitchens in Melbourne, and Melbourne businessman Ben Cook.
“I am thrilled to have the opportunity to be part of a successful ownership team,” Mr Harkness said.“Ben and I have already been developing new menus and dishes, his guidance has been invaluable.”
